We had the pleasure of dining at Tom Brown’s restaurant at The Capital Hotel and enjoyed a seafood tasting menu that was nothing short of exceptional. From start to finish, the experience was seamless, combining creative cooking, refined flavours, and warm hospitality.
The menu started strong with the Lobster toast with nori. This small bite set the tone for the evening. Crisp, rich, and packed with flavour, it was one of the standout dishes for us.
My wife particularly loved the Mackerel tartare, quail egg, and soy. The balance of textures and the freshness of the fish impressed her. Another highlight was the Raw scallop, served with melon and oscietra caviar. It was refreshing, light, and elegantly presented.
Moving into the middle courses, the creativity of the kitchen really shone. My wife enjoyed the Crab custard with tomato and horseradish. It had a smooth texture and a clever depth of flavour that worked beautifully with the gentle heat of horseradish. I opted for the Cuttlefish “cacio e pepe.” This was a playful interpretation of a classic pasta dish, but with the cuttlefish replacing the pasta. The result was unique, memorable, and executed to perfection.
For mains, we each chose different dishes. I had the Cod with lobster sauce, turnip, and spinach. The cod was cooked with precision, flaky and moist, elevated by the rich lobster sauce. It was indulgent without being overwhelming.
My wife went with the Monkfish, paired with courgette and roast chicken butter. The fact that halal options were available made this dish even more enjoyable for her. The monkfish was firm yet tender, with the chicken butter giving it a luxurious finish. Both plates were outstanding and left us wishing for more.
Desserts continued the high standard. My wife went for the Fig with yoghurt and birch, which offered a balance of sweetness and earthy notes. I chose the Cherry with Caramelia 36% hazelnut, which delivered richness, crunch, and just the right amount of indulgence to round off the meal.
Throughout the evening, we paired the courses with mocktails prepared by Jose. They were refreshing, well-balanced, and matched the dishes nicely, proving that alcohol-free options can be just as creative as wine pairings.
The service deserves special mention. Carlos looked after us with attentiveness and genuine warmth. He struck the perfect balance between professional and personable. The chefs also came out to explain certain dishes, which added a personal touch and gave us insight into the thought behind the menu.
Dining here truly felt like Michelin-standard cooking. The creativity, precision, and consistency across each course suggest it is only a matter of time before this restaurant earns its first star. Every detail, from presentation to flavour, was handled with care and confidence.
The setting at The Capital Hotel adds to the charm. Elegant without being pretentious, it creates a comfortable atmosphere where the food can take centre stage.
If you enjoy modern seafood prepared with skill and creativity, this restaurant is a must-visit. It offers an experience that feels both special and memorable. My wife and I left feeling that we had experienced one of the best meals in London this year.
